Answer:
On the PST Enterprise client configuration there is an option to enable the generation of audit logs for PST files and messages as well as the action that is applied to them. This file is generated by the PST Enterprise Client running on the client machine when it discovers a PST. The audit logs include entries for each disconnect, rename and delete action on each PST.
The default location for these audit logs will be the end user's Application Data location, for example:
C:\Users%Username%\AppData\Roaming\Barracuda\PSTEnterprise
